Gluten Free Banana Nut Bread
Ingredients
1 box Betty Crocker Gluten Free yellow cake mix
1 c. mashed very ripe bananas about 2 medium
1 stick of butter softened
3 eggs room temperature
1 tsp. vanilla
1 c. chopped walnuts divided
Instructions
Heat oven to 350 degrees.
Spray a loaf pan with Pam Simply Coconut Oil (GF).
In a large bowl, beat cake mix, mashed bananas, butter and eggs on low speed until moist; then on medium speed for 2 minutes.
Stir in half cup walnuts by hand.
Pour into pan.
Sprinkle with remaining half cup walnuts.
Bake 55-60 minutes or until toothpick inserted in center comes out clean.
Cool 2-3 minutes and then loosen sides of loaf from pan.
Remove from pan to cooling rack.
Cool slightly before slicing.
