Gluten Free Banana Nut Bread

Ingredients

  • 1 box Betty Crocker Gluten Free yellow cake mix

  • 1 c. mashed very ripe bananas about 2 medium

  • 1 stick of butter softened

  • 3 eggs room temperature

  • 1 tsp. vanilla

  • 1 c. chopped walnuts divided

Instructions

  1. Heat oven to 350 degrees.

  2. Spray a loaf pan with Pam Simply Coconut Oil (GF).

  3. In a large bowl, beat cake mix, mashed bananas, butter and eggs on low speed until moist; then on medium speed for 2 minutes.

  4. Stir in half cup walnuts by hand. 

  5. Pour into pan.

  6. Sprinkle with remaining half cup walnuts.

  7. Bake 55-60 minutes or until toothpick inserted in center comes out clean.

  8. Cool 2-3 minutes and then loosen sides of loaf from pan. 

  9. Remove from pan to cooling rack. 

  10. Cool slightly before slicing.
