Gluten Free Country Cowboy Cookies
I love to make “Small Batch” cookies. This recipe makes 12-14 cookies.
Ingredients
Mix well by hand:
3 TB brown sugar
3 TB white sugar
3 TB softened butter
1 egg
1 tsp vanilla
Mix:
½ c. Bob’s Red Mill Gluten Free flour
½ tsp. baking soda
½ tsp. salt
Add as directed below:
½ c. Bob’s Red Mill Old Fashioned Rolled Oats
1/3 c. chopped nuts walnuts or pecans
1/3 c. vanilla chips
1/3 c. semi-sweet chocolate chips
Instructions
Mix dry and wet ingredients together.
Add oats and mix well by hand.
Add nuts and chips last.
Drop tsp. size dough on cookie sheet
Bake at 350 degrees for 10-12 minutes.
Recipe Notes
Note: I have found that if I let gluten free dough sit for about 10 minutes after all the ingredients are mixed the texture and flavor of the cookie is wonderful.
