Yellow Crooked-Neck Squash

I’m always challenged to find ways to encourage our children to eat more vegetables. steamed veggies just don’t seem to make the cut at our house, So This Delicious side dish has become a hands-down favorite. Enjoy!

Ingredients

  • 2 Tbsp. olive oil

  • 3 large yellow crooked-neck squash

  • 1 medium white or yellow onion, cut into chunks

  • Salt and pepper to taste

Instructions

  1. Saute all until you reach desired doneness. My family tends towards “burnt.”

Recipe Notes

I also love using a cast iron frying pan. But I live in the South!
