Sante Fe Chicken & Rice Casserole
Ingredients
2 Tbsp. olive oil
1 cup onion, diced
½ cup each of red, yellow, and orange peppers, all diced
½ cup green bell pepper, diced
14 oz. can Red Gold Petite Diced Tomatoes with Green Chilies
10 oz. bag of Mahatma Saffron Yellow Rice
1 rotisserie chicken, deboned and cut into pieces
1 can black beans, drained and rinsed
3 cups Mexican blend cheese, shredded
Instructions
Cook rice according to package directions.
Sauté vegetables in olive oil.
Mix rice, vegetables, can of tomatoes, black beans, and chicken.
In a 9x13 pan, layer rice mixture, then 1 1/2 cups cheese, then remainder of rice mixture, and top with 1 1/2 cups cheese.
Bake at 350 degrees for 30 minutes, uncovered.
