Sante Fe Chicken & Rice Casserole

Ingredients

  • 2 Tbsp. olive oil

  • 1 cup onion, diced

  • ½ cup each of red, yellow, and orange peppers, all diced

  • ½ cup green bell pepper, diced

  • 14 oz. can Red Gold Petite Diced Tomatoes with Green Chilies

  • 10 oz. bag of Mahatma Saffron Yellow Rice

  • 1 rotisserie chicken, deboned and cut into pieces

  • 1 can black beans, drained and rinsed

  • 3 cups Mexican blend cheese, shredded

Instructions

  1. Cook rice according to package directions.

  2. Sauté vegetables in olive oil.

  3. Mix rice, vegetables, can of tomatoes, black beans, and chicken.

  4. In a 9x13 pan, layer rice mixture, then 1 1/2 cups cheese, then remainder of rice mixture, and top with 1 1/2 cups cheese.

  5. Bake at 350 degrees for 30 minutes, uncovered.
