Black Bean & White Corn Salsa

Ingredients

Salsa:

  • 1 can black beans, drained and rinsed

  • 1 can shoepeg corn, drained

  • 1/3 cup each of red, orange, and yellow peppers, chopped fine

  • ½ cup green onion, chopped fine

  • 4 avocados, chilled and diced

Dressing:

  • 1/3 cup white sugar

  • 1/3 cup canola oil

  • 1/3 cup red wine vinegar (do not use any other flavor of vinegar)

  • 2 Tbsp. soy sauce

  • 2 tsp. Worcestershire sauce

  • 1 tsp. yellow mustard (not dry mustard)

Instructions

  1. Mix all salsa ingredients, except avocados.

  2. Whisk together dressing ingredients.

  3. Chill at least 3-4 hours.

  4. When ready to serve, add 4 chilled, diced avocados.

  5. Serve with Tostito Scoops
