Black Bean & White Corn Salsa
Ingredients
Salsa:
1 can black beans, drained and rinsed
1 can shoepeg corn, drained
1/3 cup each of red, orange, and yellow peppers, chopped fine
½ cup green onion, chopped fine
4 avocados, chilled and diced
Dressing:
1/3 cup white sugar
1/3 cup canola oil
1/3 cup red wine vinegar (do not use any other flavor of vinegar)
2 Tbsp. soy sauce
2 tsp. Worcestershire sauce
1 tsp. yellow mustard (not dry mustard)
Instructions
Mix all salsa ingredients, except avocados.
Whisk together dressing ingredients.
Chill at least 3-4 hours.
When ready to serve, add 4 chilled, diced avocados.
Serve with Tostito Scoops
