Veggie Chili (Crockpot Friendly)

Serve with French bread and a salad!

Ingredients

SautÉ until soft:

  • 2 Tbsp. olive oil

  • 1 cup diced onion

  • 1 cup diced carrot

  • 1/2 cup diced celery

  • 4 Tbsp. chopped garlic

Add to crockpot:

  • 15 oz. can fire roasted tomatoes, undrained

  • 15 oz. can tomato sauce or puree, undrained

  • 1 1/2 cans water*

  • 3-4 cups of small chunks of butternut squash (I buy pre-cut)

  • 1 tsp. salt

  • 1/2 tsp. black pepper

  • 1 tsp. dried basil flakes

  • 1 tsp. dried oregano flakes

  • 1 tsp. cumin

  • 1-3 tsp. chili powder

  • 1 lb. extra lean ground beef, optional

  • Any additional vegetables, optional

Instructions

  1. Add all ingredients to crockpot; then cook 2-4 hours on high.

Recipe Notes

*Add more water or beef broth if you prefer more juice; however, you will need to adjust the seasoning.
