Veggie Chili (Crockpot Friendly)
Serve with French bread and a salad!
Ingredients
SautÉ until soft:
2 Tbsp. olive oil
1 cup diced onion
1 cup diced carrot
1/2 cup diced celery
4 Tbsp. chopped garlic
Add to crockpot:
15 oz. can fire roasted tomatoes, undrained
15 oz. can tomato sauce or puree, undrained
1 1/2 cans water*
3-4 cups of small chunks of butternut squash (I buy pre-cut)
1 tsp. salt
1/2 tsp. black pepper
1 tsp. dried basil flakes
1 tsp. dried oregano flakes
1 tsp. cumin
1-3 tsp. chili powder
1 lb. extra lean ground beef, optional
Any additional vegetables, optional
Instructions
Add all ingredients to crockpot; then cook 2-4 hours on high.

*Add more water or beef broth if you prefer more juice; however, you will need to adjust the seasoning.
