Day-of-the-Wedding Sausage Casserole

I can’t claim this recipe as my own, and it’s simply heavenly. Several years ago, my friend LeeAnne brought this casserole over for our family to enjoy on Christmas morning. And it’s been a family favorite ever since. You can easily make it gluten- free, especially since Kellogg’s now makes gluten-free Rice Krispy cereal.

Ingredients

  • 1 lb. package hot ground sausage (I use Jimmy Dean)

  • 1 lb. package ground mild sausage (I use Jimmy Dean)

  • 1 small onion, finely chopped

  • 2 cups cooked white rice

  • 4 eggs, beaten

  • 2 cans (10 1/4 oz) cream of celery soup

  • ¼ cup milk

  • 6 cups Rice Krispy cereal

  • 1 package (16 oz.) sharp cheddar cheese, grated

Instructions

  1. Brown sausage and onion; drain. Mix with rice.

  2. Combine eggs, soup, and milk.

  3. Layer sausage and rice, cereal, and one half of cheese in a 9x13 casserole dish.

  4. Pour soup mixture over layers and top with remaining cheese.

  5. Bake at 350 degrees for 30-45 minutes.
