Chicken Fantastic
Ingredients
6 oz. box of Uncle Ben’s Long Grain and Wild Rice, Fast Cook Recipe
4 cups cooked and diced chicken breast
1 can French-style green beans, drained
1 small can sliced water chestnuts, drained and chopped fine
1 can cream of celery soup
1 cup real mayo
1 cup skim milk
¼ cup melted butter
½ cup finely chopped onion
1 tube of Ritz crackers, crushed fine
Instructions
Cook rice according to directions. Let cool.
Add to rice: chicken, green beans, and water chestnuts.
Sauté onions in butter. Let cool slightly. Add to rice mixture.
Mix: cream of celery soup, mayo, and milk.
Add this to rice mixture.
Put in a 9x13 glass pan.
Top with crushed Ritz crackers.
Bake uncovered at 350 degrees for 30-45 minutes or until edges are bubbly.

1 seven oz box of Zatarain’s Long Grain and Wild Rice
4 cups cooked and diced chicken breast
1 can French-style green beans drained
1 small can sliced water chestnuts, drained and chopped fine
1 twelve oz Pacific Organic Cream of chicken soup
1 cup real mayo
1 cup skim milk
¼ cup melted butter
½ cup finely chopped onion
Gluten-free bread crumbs or your favorite gluten-free crackers, crushed
Instructions
Cook rice according to directions. Let cool.
Add to rice: chicken, green beans, and water chestnuts.
Sauté onions in butter. Let cool slightly. Add to rice mixture.
Mix cream of chicken soup, mayo, and milk.
Add this to rice mixture.
