Curry Chicken and Rice
Even if you’re not a big fan of curry, you’ll probably like this recipe. The curry flavor is mild. The recipe is easy to make, child-friendly, and With one minor adjustment, can be gluten-free.
Ingredients
Saute ingredients in olive oil:
2 Tbsp. olive oil
1 medium onion, diced
1 medium green bell pepper, diced
1 cup diced celery
2 tsp. minced garlic
Add and simmer 10-15 minutes:
1 cup chicken broth
2 cans Campbell’s Tomato Bisque Soup (see note)
3 tsp. curry powder
1 tsp. salt
½ tsp. black pepper
Add one Of the following:
4 chicken breasts, browned and chopped
1 rotisserie chicken, chopped
Instructions
Serve with white rice.
Recipe Notes
To make this recipe gluten-free, use Campbell’s Organic Sun-Ripened Tomato & Basil Soup (instead of the Bisque Soup) and add 2 Tbsp. cornstarch to thicken slightly.
