The Best Gluten Free Coco-Cola Cake

Ingredients

  • 2 c. sugar

  • 2 c. Gluten Free 1 to 1 Baking Flour Bob’s Red Mill This is my favorite GF flour.

  • Stir together.

  • 1 c. butter

  • 3 TB. Cocoa

  • 1 c. Coca-Cola

  • Bring to a boil.

  • ½ c. Buttermilk

  • 1 tsp. baking soda

  • Stir together.

  • 2 eggs

  • 1 tsp. vanilla

  • Stir sugar & flour together. Boil butter cocoa, & Coke. Pour over sugar & flour. Stir well by hand. Stir in buttermilk. Then add eggs and vanilla. Stir well by hand.

  • Let stand 10 minutes before pouring into glass pan. Helps the GF flour blend better.

  • Pour into 9x13 glass pan. Bake at 350 degrees for 30-40 minutes.

Icing

  • 1 stick of butter

  • 3 TB cocoa

  • 6 TB Coke

  • Bring to a boil. Remove from heat.

  • Add: 1-16oz box powdered sugar

  • 1 tsp. vanilla

  • Beat with a mixer on medium until well blended.

  • Add: 1 c. chopped pecans.

  • Mix by hand.

  • Pour over cake while icing is hot.
