This is an awesome Gluten-free recipe!!
Pecan Chocolate Chip Oatmeal Cookie--Gluten Free
- 1 stick of butter softened
- ¼ c. white sugar
- ½ c. packed light brown sugar
- 1 tsp. vanilla extract
- 1 large egg room temp
- 1 c. gluten-free flour I love—Bob’s Red Mill GF--1 to 1 Baking Flour
- ½ tsp. baking soda
- ½ tsp. baking powder
- ½ tsp. salt
Mix dry ingredients together.
- ½ c. pecans chopped
- ½ c. semi-sweet chocolate chips
- ½ c. gluten-free oats
Cream butter and sugars by hand.
Add vanilla and egg.
Add dry ingredients.
Then add pecans, chips, and oats.
Drop by teaspoonfuls on cookie sheet.
Bake at 350 degrees for 10-12 minutes.
