Flu season got you down?
When anyone in my home gets the sniffles, we pull out a frozen chicken and put the water on to boil. Three hours later the kitchen is full of goodness, carrots, and broth.
I don’t know why chicken soup is good for the body and soul, but it works. Maybe medicinal, maybe just comfort food. This soup is a regular part of our get-well-soon regimen.

Nana’s Get Well Soon Soup
- Whole chicken
- 1 onion
- 3 stalks celery
- 2 potatoes diced
- 3 carrots
- Angel hair pasta or your favorite noodles
- Salt & pepper
Salt and pepper chicken, place in your largest pot and fill with water. Add onion and celery, finely chopped.
Bring to a boil and simmer for 1-2 hours until chicken is falling off the bone. May need to add additional water if too much cooks out. Add carrots and potatoes about the last 30 minutes.
Remove chicken and set aside to cool. Debone chicken and add meat to soup.
Add about ½ cup pasta. If you add too much, it will soak up all the broth and become more like a casserole. If you desire a thicker soup or chowder, add ½ - 1 can cream of mushroom soup.
Total prep and cooking time, about 3 hours
